say-cheeseWelcome to the first post in a series on cheese making, a topic much simpler than you might think. It’s the process of heating milk to the point that curds (the delicious fat solids) separate from the whey (the watery by-product). And I’m not talking about the curds couch-surfing at a mate’s place while the whey rips up all their old photos and changes the locks, I’m talking about bacteria, enzymes and acids. Using this process you can essentially make most other forms of cheese and I’ll cover this soon.

$100 Pizza Oven

I was hungry for pizza so I built a pizza oven, that makes sense right? As most of you might of gathered by now we like food an awful lot, especially baking and our, lets call it a “healthy” obsession takes up a good portion of our time. So when we heard the Melbourne Pizza Festival was coming to town we were sold on the idea. Mouth watering succulent pizza would be on offer and who are we to refuse, but sadly we only managed to get our mouths around just two slices and that just wasn’t quite enough to tame our wild stomachs. I’m not saying the festival or pizza wasn’t good, far from it, but unfortunetly for us they had failed to allow room for half of Melbourne to fit and so resulted in a very crowded venue, and a very hungry us. Rainbow salad (naturally sugar free, raw, vegan, gluten free, grain free, dairy free, soy free)

This salad is one of my family favorite and it works well even if eaten by itself.

Try to get them organic as they are root vegetables and are quite exposed to pesticides.

½ celeriac
1 parsnip
2 carrots
1 beetroot
2 tbs oil
1.5 tbs apple cider vinegar or 1.5 lemons
1 tsp sea salt (Celtic is even better)

Peel and grate all the vegetables in a glass bowl. Add salt and mix well with your hands (washed of course) then add the oil and vinegar.
It is as simple as that … and it tastes good.

Chocolate and strawberry tart (sugar free, grain free, gluten free, dairy free, soy free, egg free, vegan, raw)

2 cups almond meal
1 tsp vanilla extract
2 tbs honey raw
¼ cup filtered water
1 tsp chia
3 tbs melted coconut butter
1 tbs coconut flour
2-4 tsp raw honey (taste it for sweetness)
5 tbs melted coconut butter
1.5 cups coconut water (thai coconut)
1 cup coconut meat (thai coconut)
1 cup cashew presoaked for 20 minutes or more
1 vanilla bean scrapped
5 Medijol dates deseeded
4 tbh melted cacao butter
6-7 tbs raw cacao

Combine all the pastry ingredients in a food processor and process until it resembles a ball of pastry. Then take the tart trays and spray them generously with coconut oil. Divide the pastry into 4-6 balls and start building the pastry shape in the form. Place the tart forms with pastry in the freezer for 10-20 minutes.
In the meantime add all the ingredients into a blender and blend them well. Make sure that the coconut oil and cacao butter go in last and you ad them in small amounts at a time. It should look like a cream when it’s done. Place the filling in the freezer as well for 10-15 minutes.
To assembly just pour or scoop the filling into the tart forms (with the pastry in them) and decorate with fresh or frozen cut strawberries.
Place them in the fridge for another 2-4 hours until well set. Then enjoy!

The Challenge – Day 31 First month finished of my 1 year best of health challenge

Here it is the last day of first month into my 1 year challenge.
I’ll miss the “attitude of gratitude” which I expressed every day for a month but for mow I’ll just keep it for myself.
To sum up, the first month went pretty well with all the green smoothies (which I’ll continue to have every day for the whole year). The food journal helped me to observe overeating – where from is this coming. I’ve noticed 2 major triggers for eating bad food and/or overeating: one is tiredness and the other one is low blood sugar levels. As a mum of 3 kids under the age of 7 I encounter many sleepless nights therefore being tired was the norm for me. Even now, when I’ve realized what is triggering my bad food choices I still cannot avoid being tired (as my mum role is ongoing). However I can chose to sleep next day or whenever I can instead of doing heaps of jobs around the house. With the low blood sugar issue I need to find out more which foods have a lower GI and to eat mostly those.
Even if I’m not yet on top of the world in regard to my health I do feel empowered to make the necessary changes.
So, for next month I will continue with the 200 grams of greens a day and I will eliminate some foods (which I’ll confirm later) and I’ll introduce some new foods healthier. That is for my body. For my soul I will read 3 books in relation to finding life purpose. For my mind I will try to meditate for 20 minutes 5 times a week.

I’m grateful for:
1. finishing up the first month of challenge
2. realizing what is important for me and my family at this time
3. all the slaps in the face I receive from the universe
4. the extraordinary friends that I have in my life
5. inspiration

Three exercises for Clearing Chakras

Three experiences for your soul

For all exercises: Sit or lay down comfortably. Take 3 deep, relaxing breaths realizing you inhale new fresh energy and exhale used and diseased energy.


1. Every morning for 3-5 minutes just sit down relaxed (maybe on the side of your bed) and close your eyes and imagine or visualize a white light coming from above and going into your Crown Chakra and also surrounding you as a halo. You need to know that this light is both healing and protecting and it will keep you protected for 24 hours.

2. Every night before going to bed take 5 minutes and do this exercise: imagine or visualize first your basic chakra as a red ball of energy, inside the ball there is a light source emanating light. Look around the ball and identify any dark or black spots allow the light to intensify until all the dark/black spots are cleared and the energy ball is shining nicely red. Do the same exercise for all the chakras. Their colors are: basic – red, sacral – orange, solar plexus- yellow, heart – green, throat – blue, third eye – indigo (dark blue/violet), Crown – purple.


3. Do this exercise 2 times this week, first time go backwards from the present moment and the second time go forwards from the farthest moment in your life which you can remember.

Go on a journey through your life moments remembering all the uncomfortable, sad, upsetting moments. You need to go also to any moment when you had an important argument with someone or when you got upset with someone (and you still are). Re-live the moment and release the person by forgiving the person and forgiving yourself (and all other people involved). As I understand that in your life might be moments extremely traumatic if you accept that moment as an experience and forgive people the people involved you then can move forward and live a better life.
What we don’t know is that any anger, resentment, upset, unforgiveness, etc eats up our life energy, our positive energy and ties us up to the person who did the harm to us in a very unhealthy way. If you have enough traumatic moments in your life and you don’t release them then your body can get so weak that the disease will appear.
You don’t have to agree to the harm other people did to you but you need to release them and yourself to live the life you can live.

I recommend doing it both backwards and then forward because is amazing how many new moments you can find when you go the other way around.
