Spinach and potato patties (Gluten free, naturally sugar free)

Ingredients:

4 potatoes boiled and mashed

1 tbs butter

3 tbs grated white goat’s cheese

1 cup grated sheep’s cheese

2 spinach cubes frozen

1 pinch sea salt

1 free range egg

3 tbs quinoa cooked (heaped)

Olive oil spary

 

Method:

Preheat the oven at 150 C.

Mix the potatoes with butter, goat’s cheese, sheep’s cheese, chopped spinach and salt. Add the egg and quinoa then mix everything well.

 

Form the patties with you hands and place them on a foiled and oiled tray. After you’ve done them all just spray them with olive oil and place in the oven for about 20 minutes or until they are golden.

 

This recipe is very child friendly as all my children eat them quickly.

Note: You can fry them on stove in the fry pan and they will be probably even tastier but … less healthy. So, I opted for the oven and it worked well.
