Apple and Blueberry mini muffins (Gluten Free, Sugar Free, Dairy Free, Soy Free, Yeast free)

Ingredients:

 

3 free range eggs

2 organic apples peeled and cored (grated)

3 pinches cinnamon

1 tsp vanilla

1 tsp bicarbonate

6-7 tsp Stevia powder

3 tbs melted coconut butter

1tbs Agave nectar

1 cup self rising gluten free flour

1 tsp chia

2 hands full frozen or fresh blueberries

½ cup rice milk

 

 

Method:

 

Preheat the oven at 140 C.

Beat the eggs for a couple of minutes until foamy and light yellow. Add vanilla, bicarbonate and cinnamon and beat again. Then add Stevia and beat again for 30 seconds.

Now, add one by one all the liquid ingredients. Then add the flour and apples (make sure you squeeze the juice out of them) and combine gently. Lastly, add the blueberries and chia seeds and mix gently.

Spoon the batter into greased mini muffin trays (you need at least 6 trays) and bake for about 20 minutes (more or less depending on the oven).
