Donut with chocolate icing (sugar free, grain free, gluten free, paleo, dairy free, soy free)

Ingredients:

¼ cup coconut flour
¼ cup almond flour
½ glass scd yogurt or non dairy milk
1 egg whole
2 egg whites
2 tbs homemade unsweetened apple sauce
1 tbs LSA
½ tsp bicarbonate soda
2 tbs honey
4 tsp Stevia
½ tsp vanilla extract
Icing:
½ sugar free chocolate
2 tbs butter or coconut butter

Method:
Preheat oven at 140C.
Oil well 6 donut trays (I only had one and I used it to bake them one by one).
Separate eggs and in another bowl put all the dry ingredients.
Beat the egg whites with honey and Stevia until nice and fairly stiff.
In the dry mix bowl add the remaining liquid ingredients and mix them well to get a paste without any lumps.
Then add the egg withes and very gently fold the mixture to incorporate them.
Using a bag with a cut corner put the mix in the donut trays.
Bake it for 10-20 minutes or until it is set and golden.
Take them out and leave to cool down.

In a double boiler melt the chocolate and add the butter. Mix well and leave it to cool.

To assembly just pour chocolate over the donuts to make them look as the ones from the shops … but I bet you they taste way better.

For my family it was a real success and my son was really happy to have them at the “special food” day.

Red lemonade (sugar free, gaps, paleo, SCD, raw)

I’ve created this lemonade for the special food day at my son’s school as he cannot have any of the “treats” they serve on the day. He had the list of “special foods” and ticked what he wanted on it. On of the items was raspberries drink (a soft drink with sugar and heaps of red dye) and chocolate ring (this one I’m going to make next and post it soon).
The meat pie I just bought it gluten and dairy free (really expensive) because I couldn’t just do all at once.
So here it is:

Ingredients:

2 cups raspberries
8 tbs raw honey
3 lemons (juice only)
1.5 glass of water.

Method:
Blend all the ingredients well.

Use a strainer to separate the seeds from the mix (they are not really nice when you feel them in your mouth so make sure you don’t skip this step).

Then fill about ¼ bottle with this mix and complete it with filtered water or natural mineral water.

Refrigerate the rest for 2-3 more days (if you can hide it from kids).
