Raffaello bonbons (Vegan, gluten free, dairy free, sugar free, soy free, egg free)

Today I’ve been in the experimenting mood so I tried this recipe which came up with a very interesting taste. The bonbons are nice and fluffy and the almond inside gives them a surprise crunch.


125 grams fine desiccated coconut (make sure it doesn’t contain any preservatives) + extra for decorating
½ can organic coconut cream
2 tbs organic honey
50-100 grams soaked and roasted Almonds (soak for 10+ hours then dry them in the oven on the lowest).



Combine the coconut flakes with coconut cream and honey. Mix them all then leave it to sit for about 20 minutes to absorb all the liquid.

Then take about ½ tbs at a time and roll it into a ball.

Insert one almond then re-do the ball.

You need to be very careful as they break easily.
Repeat the operation until you finish the composition.
Then roll them one by one through the extra coconut flakes.
