Paleo Friday Fudge

This is the bomb!

No refined sugar’s insight just beautiful sweet, chewy, nutty fudge.

1 cup coconut oil
1 cup almond butter
½ cup raw organic honey or rice malt syrup
⅓ cup unsweetened shredded coconut (optional)
1 teaspoon vanilla extract
pinch of salt
extra sprinkle of unsweetened shredded coconut

Add coconut oil to a food processor then add almond butter, unsweetened shredded coconut, vanilla extract, honey and just a small pinch of salt. Mix all ingredients until fully combined.

Pour the ingredients into a baking tray / non-stick dish and use a spoon to spread out evenly. It doesn’t matter what size tray you use. The smaller it is, the taller your fudge will be and vice versa.

Place in the freezer to harden, finish with a sprinkle of shredded coconut (optional)
