Paleo home made bacon and chicken breast

For my homemade “processed” meats I used more or less this recipe posted by eazypaleo.

It’s hard to look for a healthy version of Bacon in the market that is Nitrate free and MSG free. It is safer to make your own and wait for 7 days curing.

Here’s what you need:
-1kilo/2lb Pork belly, skin on
-2 tbsp sea salt
-1 tbsp freshly ground black pepper
-1 tsp dried rosemary
-1 tsp dried thyme
-1 tsp fennel seed
-2 bay leaves
-1 glove garlic, minced
-1 tbsp raw honey

1. Rinse pork belly and pat dry.
2. Combine all the seasonings in a bowl, except for the honey.
3. Rub all the seasoning over the pork. Place the pork in a Big ziplock with the leftover spices and honey. Shake well.
4. Refrigerate for 7days, flipping the bag every day or so.

5. After 7 days, remove the bacon from the bag and rinse it thoroughly, pat dry.
6. Preheat oven to 200F.
7. Place bacon in baking pan and roast until the meat reaches 150F or about 2 hours.
8. Transfer bacon to you cutting board and slice. Let it cool then wrap and refrigerate again.
9. When you’re ready for a delicious treat, slice the meat to whatever thickness you like, and cook it the same way as you would any other bacon.

The differences for me were that I have used:

3 kg pork belly (2 pieces)

1.5 kg chicken breast

I have marinated them for about 6-8 days then half of them I have smoked in the BBQ (charcoal BBQ) with special cherry wood chips (you can buy them in shops – Bunnings in Australia). I have smoked them for about 1 – 1.5 hr then placed them in the oven (with the ones which I haven’t smoked) and cooked them for about 2-3 hrs on low temperature. You’ll have to check them to see how are they going and also you need to cover them with foil or a lid.

Today I felt inspired by a recipe from a blog I follow so I adapted the recipe from Organichabit to suit my Paleo – ish life style.
This amazing salad (which was my lunch) is very filling and tastes great.

The ingredients:
red capsicum (for color)
cubed avocado
red onion finely chopped
2-3 rashers of homemade (yes I made it myself – recipe on request) organic bacon
olive oil
apple cider vinegar
salt and pepper

It does take a bit of time and I added some stuff so make sure to lean in and really check out how I switched this one.  The first thing I changed was – no red onion – get that ish OUT of here. Instead, I used mushrooms – totes a great substitution. I spiralized 5 mini sweet potatoes (it fed my sister, mom, myself and I have enough for lunch tomorrow). I used 1.15 lbs of chicken (aka 2 breasts) and I didn’t have any red pepper flakes – whoops!

The largest change I made was adding in bacon. I did this by cooking the bacon first and then when it was very close to being done I took it off the burner. I got rid of some of the extra bacon grease and added a bit of olive oil to the pan. I tossed…

Raw cacao powder is tough to find. But I finally found a bag at my local Whole Foods, and I’ve been dying to try it out.

To be honest, I don’t know much about pies. But I knew I wanted one with a crunchy and flaky crust, so when I stumbled on this recipe for Raw Macademia Salted Caramel Pie Crust, I knew I had to give it a try. This crust is so wonderfully thick and stiff, that I was able to use my little tart cups that I got just recently. Just make the crust, press into the molds and set in the freezer. It’s so easy.

Last year around this time, I was living in Australia and getting eaten alive by mosquitoes. It’s crazy that it has been about a year since then and it feels like I just started life out here in NYC. I’ve been here for exactly 5 months! Kudos to me.

I was looking at my monthly budget and noticed as always, that I spend so much money on food. When I was in South America with Beverly, our grocery budget was very minimal. At the hostel, it would either be a shared meal between my sister and I, veggies and some protein, or ramen. We wanted to use the majority of our money on adventures such as climbing a freaking volcano in the cold ass weather, carpool with the local Peruvians to get to a town to get near Machu Picchu, and or bus tickets across each country.
