What’s for dessert tonight: almond coconut cookies & strawberry sorbet (vegan, paleo, aip)


Strawberry sorbet is made with frozen strawberries, a dash of maple syrup or honey, and a splash of water.

For almond coconut cookies, just use my nut tart crust recipe. Roll into balls, place on a coconut oil greased cookie sheet and flatten with a fork. Bake in a preheated 350 degree oven. 7 minutes for chewy, soft cookies. 10 minutes for crunchy cookies.

It may not look like much but I promise you this is an awesome simple, cookie recipe and the crunchy not overly sweet cookie pairs well with the sweet, floral sorbet.

Sorbet Cookie Sandwiches
Bake cookies for 10 minutes to get a firm crunchy cookie, let them cool and then place a tablespoon of the sorbet in between 2 cookies for yummy sorbet sandwiches. We did that tonight but they were gone before I could snap a pic!
