Recipe 12 – Gluten Free, Dairy Free



¾ cup Gluten free plain or self rising

¼ cup Amaranth Flour (2 tbs)

1 pinch salt

1.5 tsp Xanthan Gum

½ tbs coconut flour (optional)

½ cup water

2 tbs olive oil

Some extra flour as needed


½ shredded zucchini

½ kg minced organic beef and chicken

1 carrot peeled and shredded

1 onion chopped

1 pinch each: salt, pepper, cayenne, cumin, turmeric

1 tbs olive oil

2 tbs water

1 tbs coconut oil

1tsp oregano

2 tbs diced tomato


Preheat the oven at 140 C.

Mix the dry ingredients for pastry then add water and olive oil. Knead until you form dough.

Then roll it between 2 pieces of baking paper (don’t forget to spread some flour under the dough and on top of it).

Cut squares or rectangles as even as you can. Spoon in filling and roll the turnovers. Place them in the oven for about 25-35 minutes or until gold.

For the filling: place the onion and the rest of vegetables in a pan with oil and water and add the mince. Add all of the condiments and salt, stir until the meat is well cooked.
