Recipe 14 – Pear sticky date cake

-Gluten Free, Sugar Free, Yeast free, Nut free also can easy adapt to soy free, dairy free –



It can be done also soy free if you use rice milk but I haven’t tried it myself.

For a dairy free just use coconut butter instead of butter.




2 free range eggs

1 cup gluten free self rising flour

1½ cup dates (pitted)

1¾ cup water

1.5 tsp bicarbonate

3-4 organic pears

2.5 tsp vanilla

1 tsp ginger powder

6 tsp Stevia powder

1 tbs organic sultanas

3-4 tbs organic coconut butter



Toffee sauce

2 tbs Agave nectar

1.5 tsp Stevia Powder

12 tbs Soy milk (or more)

2 tsp vanilla

½ tsp cornflour

3 pinches carob



Preheat the oven at 140 C.

Line with baking paper a round tray (with a detachable bottom)

Chop the cored pears and arrange on the bottom of the tray.

In one pot on the stove add: dates with water and bicarbonate. Let them boil for about 5 minutes. Stir occasionally. Then, take from the stove and mash the dates with potato masher. Then add vanilla, ginger, stevia, sultanas, coconut butter and mix. Let it cool down for few minutes then add the eggs (make sure the batter is not too hot!) then the flour and mix well. Pour the batter over the pears and put it in the oven for about 25-35 minutes.

In the meantime prepare the toffee sauce.

In a pot on the oven add: stevia with a little bit of water and mix well to combine on the stove. Then add: milk, butter, agave and carob. Let it boil few times then add the cornflour (which you have to mix it with a bit of cold water before adding it). Let it boil a few times and keep stirring.

Take the cake from the oven let it cool few minutes then turn it upside down on a platter. Top the cake with toffee sauce when you serve it.
