Recipe 22 – Mini pizza rolls (gluten free, sugar free, soy free)

This recipe is very kids friendly as I mainly created for my children. They eat it with great pleasure and it seems I never make enough.

Ingredients:
1 pack gluten and soy free pastry sheets
1 free range chicken breast (cooked)
2 tbs pitted olives
1 cup shredded cheddar cheese
1/3 cup homemade tomato sauce (pure tomato sauce, oregano, basil, 1 tsp honey – mix them on the stove and keep stirring well).

Method:
Preheat oven to 140 C.
Prepare first the tomato sauce so you don’t rush when you have to use it.
Then take one pastry sheet and place it on a baking sheet. Spread the tomato sauce and add all the other ingredients (make sure you leave enough for the 3 pastry sheets in the pack). Then roll it and cut it in 2 cm pieces, put it on a papered baking tray and place it in the oven for about 25-30 minutes or until it’s nice and golden.
