Recipe 24 – Rainbow salad (raw, vegan)

This salad is one of my family favorite and it works well even if eaten by itself.

Ingredients:
Try to get them organic as they are root vegetables and are quite exposed to pesticides.

½ celeriac
1 parsnip
2 carrots
1 beetroot
2 tbs oil
1.5 tbs apple cider vinegar or 1.5 lemons
1 tsp sea salt (Celtic is even better)
Rainbow salad
Method:
Peel and grate all the vegetables in a glass bowl. Add salt and mix well with your hands (washed of course) then add the oil and vinegar.
It is as simple as that … and it tastes good.
