Recipe 25 – Banana cake (gluten free, sugar free, soy free)

Ingredients:
3 free range eggs
1 cup gluten free all purpose flour
¼ cup buckwheat flour
½ cup almond flour
3 very ripe bananas peeled and mashed
2 apples peeled and grated
3 tbs melted coconut butter
½ tsp soda bicarbonate
½ tsp baking powder (gluten free)
1 handfull sunflower seeds
1/3 cup water
1 tsp vanilla extract
2 tsp Stevia powder (optional)

Frosting:
½ cup SCD compliant cream
1 tbs honey
1 tbs melted coconut butter
Beat them well with a hand mixer and place it in the fridge.

Method:
Preheat oven to 140 C.
Beat the egg whites with Stevia and vanilla until stiff. In a separate bowl mix well all other ingredients. Then add the egg whites to the mixture and gently fold it into the batter.
Spoon it into a greased rectangular tray and place it in the oven for about 30-40 minutes (check regularly).
Leave it to cool down, take it out from the pan and add the frosting on top.
