Recipe 35 – Chicken nuggets (grain free, SCD, GAPS, gluten free, soy free)

My kids really wanted some chicken nuggets so I adapted this recipe (adapted from Wheat Belly Cookbook – William Davis) for them. The result was incredible good, much better than what you can eat in the fast foods … and not fried at all.

Ingredients:

2-3 chicken breasts

2 eggs

2 heaped tbs ghee

2 heaped tbs LSA or ground flaxseeds

2-3 heaped tbs almond meal

½ cup or more grated goat cheese

½ tsp turmeric

½ tsp black pepper

½ tsp sea salt

Method:

Preheat oven to 140C.

Line an oven tray with baking paper and spray some olive oil on it.

Cut the chicken breasts into 2 cm long by 1 cm wide strips (more or less, don’t be too specific).

In a bowl combine LSA, almond meal, grated cheese, black pepper, turmeric, and sea salt.

In another bowl combine eggs with melted ghee and beat them well with a fork.

Coat each piece of chicken in egg then roll it into the almond meal combination.

Put them on the papered tray and place it in the oven for about 20-30 minutes. Turn them once during the time.

There is no final product photo as the children eat them all before I had a chance to take a photo.
