Recipe 36 – Sesame and almond grain free crackers

(grain free, gluten free, SCD, GAPS, soy free, sugar free, children friendly)

I’m struggling to create some biscuits for my children’s lunch boxes because I’m transitioning the family to a SCD/GAPS diet. I like the idea of knowing what it is in the crackers so I gave it a try today. The result was really pleasing as all my 3 children declared them very yummy. Try it for yourself or your children!

8 tbs almond meal
4 tbs sesame seeds
3 tabs grated goat cheese
1 organic free range egg
4 tbs melted ghee or dairy free spread
½ tbs chickpea flour
1 pinch salt

Preheat oven at 140C.
Combine all the ingredients and mix them well. Place the bowl in the freezer for 10 minutes.
Divide the dough into 2 equal pieces.
Roll one piece between 2 sheets of baking paper.

Divide them into cracker size bits and place in the oven for about 5-10 or until nice and gold in color.
Do the same thing with the remaining dough.
Enjoy them with dips or on their own.
