Recipe 42 – Donut with chocolate icing (grain free, gluten free, paleo, dairy free, soy free)



¼ cup coconut flour
¼ cup almond flour
½ glass scd yogurt or non dairy milk
1 egg whole
2 egg whites
2 tbs homemade unsweetened apple sauce
1 tbs LSA
½ tsp bicarbonate soda
2 tbs honey
4 tsp Stevia
½ tsp vanilla extract
½ sugar free chocolate
2 tbs butter or coconut butter

Preheat oven at 140C.
Oil well 6 donuts trays (I only had one and I used it to bake them one by one).
Separate eggs and in another bowl put all the dry ingredients.
Beat the egg whites with honey and Stevia until nice and fairly stiff.
In the dry mix bowl add the remaining liquid ingredients and mix them well to get a paste without any lumps.
Then add the egg withes and very gently fold the mixture to incorporate them.
Using a bag with a cut corner put the mix in the donuts trays.
Bake it for 10-20 minutes or until it is set and golden.
Take them out and leave to cool down.

In a double boiler melt the chocolate and add the butter. Mix well and leave it to cool.

To assembly just pour chocolate over the donuts to make them look as the ones from the shops … but I bet you they taste way better.

For my family it was a real success and my son was really happy to have them at the “special food” day.
