Recipe 45 – Coconut and banana ice cream

Today I’ve bought a recipient with organic vegan ice cream. I did it partly out of curiosity partly because of my kids who liked the recipient and begged for it.
It was nice (not all my kids liked it though) but at $14 a jar is not going to be on our list. So, I tried my own version of vegan ice cream soy free (soy benefits and drawbacks are so disputed that I stay out of it or only consume very little organic non GMO).
So, here it is before I forget:

Ingredients:

1 cup organic coconut milk (you can use raw Thai coconut instead but I didn’t have any handy).
3 very ripe bananas
1 vanilla pod scrapped

Method:

Blend all well then pour it in a jar or other container and leave it to freeze. When it’s done you can either
1. take it out of the freezer, leave it 5 minutes to start soften then eat or
2. take it out of the freezer, leave it 10 minutes then blend it well and spoon it into the running ice cream machine and prepare the ice-cream cone for the feast!
