Recipe 47 – Chocolate and berry fruits Cake Roll

Today is one of my family’s member’s Bday so I decided to create something to take to the party tomorrow as a surprise.
This cake came up pretty good. I share with you the recipe here.



5 eggs separated
4 tbs coconut sugar (or agave)
1 vanilla bean
2 tbs almond meal
1 tbs coconut flour
1 tbs buckwheat flour
½ tsp bicarbonate soda

200 gr butter at room temperature
100 gr coconut sugar or to your taste
5-6 tbs cacao
1 vanilla pod scrapped

Cream 2:
100 gr SCD cultured cream
2 tbs coconut sugar

Mixed berries fresh or frozen


Beat the egg whites with and electric mixer. Add the sugar, vanilla, bicarbonate soda and the flours slowly and incorporate well.
Spoon the mix on baking papered tray and place it in the oven at 140C for about 10-20 min.
When you take it put of the oven, using a wet towel roll it to get the round shape.


In the meantime make the filling creams:
With an electric mixer, beat the butter with the remaining ingredients for Cream 1 until nice and fluffy.


In another bowl, place the cultured cream with coconut sugar and mix well with an electric mixer until all sugar is well incorporated into the cream and the consistency is the one of a cream.

After the pastry has cooled spread layers of the two creams and top with berries.
Roll it, decorate it and place it in the fridge for few hours.
